INGREDIENTS
For the Salad
- 8 nice large leaves of red Bibb lettuce
- 1 small head red Bibb lettuce
- 12 oz. bacon strips, cut into small pieces
- 1 lb. assorted mushrooms, thinly sliced
- salt & pepper
- 12 "Gnudi" Dumplings, for garnish (see recipe below)
- 1/2 cup Cider Vinaigrette (see recipe below)

For the Gnudi Dumplings
- cup ricotta cheese
- eggs
- 1/2 cup bread flour
- 1/4 cup Parmigiano Reggiano cheese, grated
- 1 tbsp. fresh sage, chopped
- 1/2 tsp. salt
- pinch of nutmeg
- 1 cup semolina, to coat dumplings
- oil for frying

For the Apple Cider Vinaigrette
- 1/2 cup cider vinegar
- 1/2 cup honey
- 1/2 tsp. Dijon mustard
- pinch salt
- 1/2 cup olive oil
- 1/2 cup extra virgin olive oil

For the Apple Cider Vinaigrette
- Combine the apple cider vinegar with the honey in a mixing bowl. Add mustard, salt and mix well.
- Slowly drizzle in the oil and using a hand whisk incorporate it to the mix to avoid later separating.
For the Salad
- Gently wash large outer leaves of Bibb lettuce and keep them on the side. They will be used to garnish plates.
- Cut the head of lettuce into smaller pieces after washing it. Place in salad bowl.
- Heat pan and sauté the bacon enough for it to release some of the fat. Add mushrooms and let cook for a couple more minutes. Season with salt and pepper. Add to the bowl.
- Add the Cider Vinaigrette and stir well.
For the Gnudi Dumplings
- Combine the first 7 ingredients in a large bowl. Make sure to mix it all well. Cover and refrigerate until it’s ready to be used. The mixture will be sticky.
- Form dumplings to about the size of a walnut or slightly smaller. Wet your hands with cold water. Lay them in the semolina as soon as they are formed, coating them very well. Place them on a sprayed sheet tray until you are ready to fry them all. They need to be nicely golden brown in color to make sure the flour is cooked all the way through.
- Divide salad between 4 large plates. Lay 2 leaves on the side of each salad to make it look kind of like a bowl. Display 3 fried dumplings on each plate. Serve
