Pasta with Asparagus and Smoked Fish

(serves 4)

“this dish is essentially a spring dish, capturing the new taste of spring with the asparagus, but retaining some of the cozy customs of winter, as represented by the smoked fish”

 

ingredients

1lb. pasta (your favorite)

12 whole garlic cloves, peeled

1 bunch asparagus

1 lemon (for zest and juice)

8oz. smoked trout (or other smoked fish)

4tbs. extra virgin olive oil

2tbs. butter

6oz. ricotta cheese

salt & pepper to taste

 

Directions:

Bring a large pot of salted water to a boil (for the pasta).

Cut asparagus into slivers, then in a large pan preheated with oil, add the garlic and let it roast slightly over medium-high heat.  Follow by adding asparagus and seasoning lightly with salt and pepper.

Cook pasta.

Crumble or break-up smoked fish into pan with asparagus and garlic.  Add the zest and lemon juice.  Finish by adding the butter.

Drain pasta and add it to sauce.  Add the ricotta cheese, and toss quickly before serving.
