Potato Piadina Makes 12 – 15 pieces
ingredients 2 lb baking potatoes 3 cups all purpose flour 1 tsp salt 1 tbsp extra virgin olive oil
directions First, peel and boil the potatoes until tender all the way through. Allow them to cool until easily handled, and then pass them through a ricer into a large bowl. Add the all purpose flour to the bowl, and mix thoroughly with the potato by hand. Portion the dough into roughly 3oz. portions, forming them into balls. Dust with flour a flat, hard surface and, using a rolling pin, flatten the dough balls into circles. Preheat the oven to 600o and bake the cakes on a baking stone for 4 – 5 minutes. A two sided electric griddle (or sandwich press) also works well. Use these piadine for making simple, rustic, hot, Italian sandwiches, such as with prosciutto cotto and scamorza cheese.
