Katina "Queen of Sparta" Nichols: hostess

 

It's an interesting story, how Katina came to Paesano's...

Our fearless leader, Michael Roddy, is famous for his scouting missions, scouring the country for the best and brightest.  Though his travels have become routine, one night he witnessed something wholly remarkable.

Standing high above Athens on the famed Acropolis, he saw throngs of people streaming northwesterly, like a steady stream of spilt ouzo.  Heading his curiosity and his gut, he followed the crowds through the ancient streets, arriving at an unassuming restaurant.

Inside, the lobby was packed to the beams with hungry, salivating, Athenians.  Diligently working his way to the front, there, at the locus of melee, was Katina, afire.

She was proud of the host stand, one hostess against hundreds of starving, ravenous diners.  It was amazing to behold.

Yet what struck him at that moment was the woman herself, who, despite the odds, had a charming smile on her lips, a twinkle in her obsidian eyes, and an amazing sheen to her raven locks.  Surely any other hostess would have been withered.

And then, her motion.  Her surety. Her professionalism.  It was precise, effortless.  It seemed even, after wave upon wave of seatings, that she became more radiant, her Hellenic beauty fueled by her triumphs.

Michael could see she was the One.

Afterwards, once the litany of "2 for Giorgitikos," "4 for Dimitrios," and "6 for Larry" had ended, and the parade of demands that would have smeared the lipstick and smudged the mascara of a regular hostess, Katina stood alone, succulent, the embodiement of the Artemisian ideal.

Michael could hardly find the words, "come to Paesano's..."

Indeed, the story has taken on mythic proportions, to the extent that the casual diner in Ann Arbor might not even believe, yet she is here, at Paesano's, in the flesh, even today greeting tremulous guests with a legendary Καλησπέρα (good evening!).
